A hands-on workshop where participants learned
to make tofu from scratch — exploring the versatility and protein-rich aspects of the humble soybean. The workshop demystified this traditional food processing method in a home setup, and revealed ways where individuals and communities can reduce dependence on supermarkets and industrial food systems.
At the end of the workshop, participants shared thoughts about the process and its similarities between the food cultures they came from. A question about the innovative “tofu alternatives” was raised, a more sustainable forms off plant- based food using locally produced beans in the Netherlands.
For Guanyan, it was the beginning of an ongoing research journey where history, ecology, and everyday care intersect in a single bean.
